Brie Stuffed Burgers

Prep your Palette: Brie Stuffed Burgers!

All you need to do is take an action. How great is it that with each and every incredible glass of wine you receive the benefit of an amazing experience.

With a fun and delicious take on Minnesota’s iconic Juicy Lucy this burger is stuffed with an oozing brie center and slathered with spicy scallion mayo spread. If you are ever in the area you need to do a quick Google search for the 5-8 Club. There are multiple locations but is the known home of the Juicy Lucy.

BRIE STUFFED BURGERS

Ingredients

For spicy scallion paste:

  • Thinly slice 4 scallions
  • Mince 2 garlic cloves
  • Thinly slice Serrano Chile
  • Zest of 1 lemon
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 cup mayonnaise

For the burgers:

  • 1.5 lbs ground beef
  • Salt & pepper
  • 4 oz brie cheese, rind removed & cut into 4 pieces
  • Vegetable oil, for brushing
  • 4 hamburger buns of your choice
  • 1 large tomato, cut in 1/4-inch slices
  • 1 head of butter lettuce, leaves separated

DIRECTIONS

  1. Make spicy scallion paste: In a food processor, pulse scallions, garlic, chile, lemon zest, olive oil, and salt together until a chunky paste forms. Set 4 tablespoons aside. With remaining scallion paste, mix it with 1/4 cup mayonnaise; set aside and refrigerate for later use.
  2. Grill Prep: Start a grill for pre-heating on high heat. You can also place a grill pan on a burner on the stove over high heat. (You know in case Mother Nature isn’t working with your plans.)
  3. Patty Making: Now while the grill is preheating, take a medium size bowl, and place the hamburger in it. Season with salt & pepper the ground beef. Then form 8 thin patties. Further take 4 patties and place a slice of Brie and a tablespoon of scallion paste on top. Take the 4 remaining patties and place on top of the other 4, pinch the edges of the patties together to seal the cheese inside.
  4. Brush burgers with oil and grill over high heat, turning once or twice, about 8 minutes for medium-rare patties. Two minutes before serving, grill hamburger buns until toasted.
  5. To assemble burgers: Taking the scallion mayonnaise you had set aside, spread a particularly thin layer on the insides of buns. Finish by filling each bun with a burger, tomato, and lettuce.
  6. Finally pair with an exquisite wine like the below bottle of Merlot, now top it off with my Super Tators Recipe found here for a magnificent meal.

Serves 4 – Well better get a 2nd bottle of wine to make sure all 4 get some!

When I am relaxing in the backyard, I enjoy a fine wine. I especially try to choose a bottle that will pair perfectly with what we are grilling for supper. In fact for this recipe, I chose a refreshing Ricord Merlot one of our exclusive labels in our wine club.

Described as a vibrant, but smooth red that encompasses the flavors of green strawberry, cherry, raspberry with a hint of Bordeaux style herbaceousness. The palate is complete with the oak spice, notes of hazelnut, toasted almond and tobacco. Which makes the Ricord Merlot a perfect choice for our Brie Burger – Beef and cheese in one bite!
