First up is food prep time. 

How many of us buy our ground meats in larger quantities only to throw it in the freezer. And then when it comes time to prep it, we need to thaw it in the microwave (10 minutes), then brown it (10-15 minutes) and finally put in the other ingredients.  Did you know when making beef & pork recipes, you can literally reduce the cooking time by browning the ground meat up in one shot and splitting it into multiple containers?  Think of what you can do with just an extra 10-15 even 30 minutes in your day!

Next tip is a money saver.

Looking to eat healthier, but switching to ground turkey or chicken will upset your family?  Brown turkey or chicken with the beef.  Mix it up.  After a while your family will not notice and you will feel better knowing you are feeding your family healthier options and not just with beef & pork recipes.

Sloppy Joes

We all grew up on sloppy joes, brown the ground beef, add Manwich, put on hamburger buns and dinner was done.  But are you getting tired of the same old same old?  I know we have in our home and besides, the amount of sodium in the canned stuff is unhealthy for everyone.  How about some variety and healthier options?

Philly Cheesesteak Sloppy Joes

Ingredients:

  • 1 tbsp. vegetable oil
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 1 Garlic clove, minced
  • 1 lb. ground beef – already cooked
  • 1/2 c. beef broth
  • 2 tbsp. ketchup
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp. brown sugar
  • kosher salt
  • Freshly ground black pepper
  • 4 slices provolone
  • 4 Hamburger buns

Directions

  1. In a large skillet over medium heat, heat vegetable oil. Add onion and bell peppers and cook, stirring often, until softened, about 5 minutes.
  2. Stir in the garlic and cook until fragrant, about 30 seconds, then add the beef. Cook until no longer pink, 6 to 8 minutes. Drain fat. (You can save yourself time on steps 1 & 2 by pre-browning the ground beef)
  3. Stir in beef broth, ketchup, brown sugar, and Worcestershire and season generously with salt and pepper. Simmer until most the liquid has reduced and the mixture is thick, 5 minutes.
  4. Top beef with provolone and cover skillet with a tight-fitting lid to melt, about 2 minutes.
  5. Remove from heat and serve cheesy ground beef mixture in hamburger buns. Serve warm.

Tip:  Need it “To Go”?  Grab that tinfoil, fill the buns with the mixture and wrap in tinfoil.  Less mess as the kids can eat them as they are partially wrapped up!

Option 1:  Instead of Hamburger buns, buy the hoagie buns.
Option 2:  Use ground Turkey or Chicken instead of beef.

Easy Pulled Pork Sandwiches

This recipe is a family favorite passed down to me by my mother-in-law.  It is so easy to make and the whole family (even the picky eaters) fill their plates with it.  Of course it is their option as to whether to have it in a bun, wrap or just piled on the plate.

Ingredients:

1-3 lbs Boneless country ribs (bone-in may be less expensive, just be sure to remove the bones before shredding).  I have even made an entire roaster of pulled pork using a large tenderloin to feed over a dozen people.  MMMMmmmm Good!

1 bottle per pound of Heinz Chili Sauce

1 can of beer (the alcohol cooks down and acts as a tenderizer)

Place into a crock pot.  Let cook all day on low (6-8 hours).  Come home to a wonderful smell as thought you’ve spent the whole day in the kitchen.  This is even good with a tortilla, on a bed of corn chips or a hamburger bun.


You can get creative with these recipes by using your own favorite seasonings.  It will be like having your own all-season cookbook without having to panic for time.  The crock pots and slow cookers I have used over the years while raising our boys have saved us from Hamburger Helper and pizzas many times.  Especially when everyone is going different directions.  Make it a grab and go and do your family dinner at the ball field, track, or even parking lot.  Spend the extra time finding out how your kids’ day went.  Maybe even talk shop with your spouse while the kids are out participating with their team.  In any event, I hope that the beef & pork recipes will help you to alleviate some of the stresses of raising your family and keeping it in a budget.
