No Peek Chicken

No peek is usually something I said to the boys when they were little and it was a birthday or Christmas, but this is a recipe for No Peek Chicken. So I peek into my pantry and freezer to make sure I had the staples available to make this recipe come to life. Standing at the spot in the kitchen where I can view both the pantry and the freezer, I see chicken breasts and Zatarain’s Long Grain Wild Rice. What could I make for dinner using these two items? To the computer I go for further inspiration. Amazingly enough, I find No Peek Chicken. Let’s roll with it!

Busy Schedules Love This Recipe!

Have you ever been so busy that you forget about planning for dinner? Let’s do this together. However, I am going to one up you, I am cooking mine without a true recipe AND in front of a live audience! You can catch our weekly show, it won’t always be me, I promise. So here we go, we are going to start with about 1-1.5 pounds of chicken breasts, a box of Zatarain’s Long Grain Wild Rice and we are going to turn it into a delicious and easy recipe that requires no peeking! Other things I am going to use because I happen to have it in my pantry is 2 cans of cream of chicken soup and a can of chicken broth. While browsing through many pages of recipes, I come across a few different versions, but I like to put my own twist on things.

Pinot Noir Wine with no peek chicken

I am going to also keep the seasonings minimal with just oregano, salt and pepper. Go with your own personal tastes as for how much of each. At this point, please turn on your oven and set the temp to 350 degrees. Also, grab a bottle of Pinot Noir and start decanting it. This versatile wine goes with almost every meal! I chose the Discoveries GrandCru Pinot Noir 2019. This is a wine that can only be obtained when a member of Wine Ambassador wine club. Love that my wine delivers to my door. Great benefit and time saver!

Putting It all Together!

So to keep this mess to a minimum, as I am not one who likes cleanup, get out a large bowl and mix together the cans of soup and broth. Stir in the seasonings and then add the rice to the bowl. Next, take the baking dish (I recommend the good ole reliable small roaster that you know your mom, grandma, aunts all used too), but spray cooking spray onto that roaster or baking dish – at least a 9 x 13. Makes serving the chicken much more simple.

Prepping the No Peek Chicken

Take the roaster or dish and pour the rice and soup mixture into it, go slowly for those of us that are not the most graceful in the kitchen. Just trust me on that or you will be wearing it! Now take your chicken breasts and place on top of the rice mixture. If you have an onion soup mix packet, you can sprinkle that over the chicken too. Now get ready for the no peek part of the chicken, bring out your handy dandy roll of tinfoil and cover the roaster with it.

Place the roaster into the oven. Bake for about 1 hour and 15 minutes, or until the chicken is cooked thoroughly. The rice should be tender as well. Remember, no peeking! You want to leave the tin foil in place for the duration of the cooking time. It is No Peek Chicken for a reason. Remove from the oven. Serve onto the plates and enjoy! Don’t forget to grab the carafe of wine and some wine glasses! Sit back and enjoy your meal. You have earned the right. You just cooked up a meal that with some raw veggies or salad is a true sit down family meal.

List of Ingredients for No Peek Chicken

  • Package of Chicken breasts – about 1-1.5 pounds
  • Box of Zatarains Long Grain Wild Rice
  • 2 cans of Cream of whatever soups – I use cream of chicken, some like cream of mushroom
  • 1 can of Chicken Broth (Can use 2 cups of water instead)
  • Salt
  • Black Pepper
  • Oregano
  • Bottle of Red Wine

So as you can see, you do not need to spend a ton of time figuring out what to make if you keep a few staples in your pantry.
