Healthy Easy Chicken with Cheese & Spice

We moms who work a full-time job plus a side gig are always looking for something quick, easy and best of all, healthy for our family. This delicious meal was made in 1 pan in less than 30 minutes! It is also Keto friendly and pairs amazing with our Tanya Pinot Grigio Lodi 2019 wine!

Healthy Easy Cheesy Jalapeno Chicken Dinner

Tonight I came home from work only to put in a couple hours into my side business. When I finished what I was doing it was past dinner time. Uh oh what is a mom to do when she is bringing home the “bacon”, living her dreams and still keeping the family fed before bedtime? She looks for simple, healthy recipes. In this case I was looking for a healthy easy chicken dinner that would keep the mess to a minimum. Also appeasing our Crossfit Crazy son and getting it more Keto friendly was a bonus.

This recipe was the one I chose after seeing a friend post about making it for family of twin 3 year old sons and her husband. Her sons have a lot of food allergies and as much as she tries to keep it non-processed she doesn’t have all day to spend in the kitchen. She also lives in Alaska now where daylight is becoming a premium.

What’s In It that Makes It a Healthy Easy Chicken Recipe?

Simple main ingredients of chicken breasts and cheese are the given. But what makes this even more delectable is that it has chicken broth, heavy cream and cream cheese as the sauce with shredded cheddar cheese. The seasonings of Cumin, chili powder, garlic powder, salt & pepper are sprinkled on the chicken right before searing the chicken to a golden brown. Because this is a single pan dinner it means less dishes overall. With a bit of help from some olive oil the chicken browns up nicely. Tonight I actually used chicken tenderloins as that is what I had on hand.

As the chicken was searing I cut up some onion and instead of risking my fingers and eyes to jalapenos, I open up a can of diced chilies. After removing the chicken I put the onions and chilies along with 3 fresh cloves of garlic using my garlic press to mince them into the pan. Sauté these for about 3-4 minutes, then add the sauce ingredients. As the cream cheese melted with the broth and heavy cream you do want to keep stirring to prevent any scorching. And don’t forget to put in some of the cheddar cheese too! Of course while cooking, one must simply open a bottle of wine to enjoy that will enhance the flavors and aromas in the kitchen. Then leading into the decadent creamy pear and apple flavors….the hint of sweetness with pleasant acidity will pair incredibly with this delicious, healthy and easy chicken dinner.

Bringing it All Together

Okay, back to the meal. Making this healthy easy chicken meal was so quick and simple. Once the sauce was mixed and melted I was able to place the chicken back into the fry pan and surrounding the chicken with the sauce I put the remaining cheddar cheese on top. I let it all cook together for about another 10 minutes to make sure the chicken was completely cooked through.

As our son needed some healthy carbs, so a quick packet of Basmati Rice put into the microwave for 90 seconds was the perfect side dish. No seasoning necessary as the sauce being put on top of the rice was absolutely the best mix! Dinner is ready – Healthy, Easy Chicken. I also make sure to pair one of my club wines with my meals because after all I work a Full-time job plus my side gig! I earn my nightly glass of wine. Tonight it was a delicious Malbec. The spicy flavors from the chilies went perfectly with the wine. They enhance the black cherry and black pepper aromas of the wine.

The one comment made by both husband and son were that the leftover sauce was so good it could be a dip…Hmmmm another recipe in the making!

Healthy Easy Chicken Ingredients & Instructions

  • 4 chicken breasts or 6-8 tenderloins – approximately 1.5 pounds
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 Tablespoon butter
  • 1/2 C. chopped onion – I used about 1/2 on small onion
  • 1 can diced chilies or 2 jalapenos seeded and diced
  • 3 cloves of garlic pressed or 1 tsp minced garlic
  • 1/3 C Chicken Broth
  • 1/4 C Heavy Cream
  • 2 Oz Cream Cheese
  • 1 C Shredded Cheddar Cheese – divided into two 1/2 Cups

First combine the spices of cumin, garlic powder, chili powder, pepper and salt into small bowl.

Next heat up a skillet over medium heat. I used about 1 tablespoon of olive oil, but nonstick spray works too.

Sprinkle the chicken with the spices on both sides of the chicken.

Placing the chicken into the skillet sear it on both sides until brown and then remove to a plate and set aside. Takes about 3-4 minutes unless you use frozen chicken, then expect up to 10 minutes.

The next step is to take the butter and melt it into the skillet while adding the onion, jalapenos or chilies, and the garlic. You only need to saute for about 3-4 minutes and stir it occasionally.

Now add the cream, chicken broth, and cream cheese to the skillet with the onion mixture still in it. Reducing your heat to low, stir this until the cream cheese melts fully. Then add 1/2 C of the Cheddar Cheese. This will melt quickly.

Adding the chicken back into the skillet, cover it with the rest of the cheese.

Place the lid on the skillet and let it all simmer together for about 6-8 minutes on low heat.

Additionally you can serve over rice, tortilla chips or to keep it all keto use cauliflower rice. All this is done in a single pan! Kitchen cleanup is quick and just as easy as cooking the meal was.

Tip: I find that it really is ready in about 30 minutes if you pull out all the ingredients and measure it. It also keeps your counter more organized and less of a clutter when doing it this way.
